POP! Goes the Gatropub
I am currently obsessed with the new trend of pop up restaurants and bars!
They have been around in the UK since the early 2000's however they have been literally "popping" up in the US and believe it or not Cuba in recent years.
I love this concept for two reasons, it gives young chefs and entrepreneurs a chance to experiment without the fear on bankruptcy and these establishments (a lot like myself) base the majority of there marketing on FREEEEEEEE social media outlets.
Though each (whether it be open for days, weeks, or months) has to abide by the same rules as any restaurant or bar when it comes to health and safety, they still have a risky allure I can't resist.
From Jose Andres to my bros of Bar Lab here in Miami--its a trend I can't get enough of.
"You do have to be a little bit crazy to want to do a pop-up," says Andrés. "But it's like being young again. It's exciting. Our staff stays up late reading old American cookbooks. They want to invest the time and energy into a project like this."
The Wall Street Journal reported just last week that owners are spending anywhere from $30,000 to $50,000 to start these ventures. Wow! Some permits here in Miami cost that much and that's just the tip of the iceberg!
